Description
This bread can be baked over coals or on a barbecue. You can change the flavor of the dough using various herbs and spices. Create a bouquet of spices to your taste, using 2 tablespoons of ground seeds or spices (try poppy seeds, cumin, fennel, cardamom, or dried chili) plus fresh herbs to taste (two green onion tops or chives, finely chopped, or a handful of dried parsley, thyme, basil, and coriander).
Ingredients
- Salt 1 tablespoon
- Olive Oil 4 tablespoons
- Honey 2 tablespoons
- Wheat Flour 20 oz
- Dry yeast 0 oz
Step-by-Step Guide
Step 1
Thoroughly mix the fresh yeast with honey, add hot water (not boiling!) and stir. Sprinkle 1 tablespoon of flour and let it sit for 15 minutes until it becomes frothy.
Step 2
Mix the salt with the flour, then add the yeast and olive oil. Knead everything in a bowl, then transfer to a countertop and knead with your wrist for 5–8 minutes until the dough is smooth and elastic.
Step 3
Return the dough to an oiled bowl, cover with a towel, and place in a warm spot to rise. When the dough has doubled in size, which will take about 1 hour, take it out of the bowl and knead again. Sprinkle the dough with your chosen spices and gather the ends of the dough in the center like an envelope. Knead the dough with the herbs and spices for 3–4 minutes to evenly distribute them throughout the dough.
Step 4
Divide into pieces the size of a tangerine, dust with flour, and roll each piece out to make very thin flatbreads (about the thickness of a coin) measuring 15 cm in length.
Step 5
In a very well-heated heavy skillet with a thick bottom, place the flatbreads and bake for 1–2 minutes without touching them until you see bubbles on the surface. Then flip and bake for another 1–2 minutes.
