Flan with Wild Berries and Almonds

Ingredients

  • Lingonberry 5 oz
  • Frozen black currant puree 5 oz
  • Red Currant 5 oz
  • Chicken Egg 1 piece
  • Shortcrust Cake Mix 20 oz
  • Sugar 5 oz
  • Semolina to taste
  • Chopped almonds to taste

Step-by-Step Guide

Step 1

Knead the shortcrust pastry. Cover with parchment paper, place peas or beans on top. Bake in the oven at 355°F for 30 minutes until golden brown.

Step 2

Rinse the berries, mix with sugar and the egg.

Step 3

Remove the pastry from the oven, take off the parchment paper. Make small holes with a fork (see photo), sprinkle with semolina (to prevent the berries from sinking).

Step 4

Place the berries on top. Put the pastry back in the oven. Bake at the same temperature for another 30 minutes.

Step 5

Sprinkle with almonds.
