Recipe by John Smith, chef at American Bistro. Flammkuchen is a type of German open pie with various toppings on a thin, crispy crust, resembling Italian pizza. Literally, flammkuchen means "flame pie"; traditionally, these pies are baked in an oven, directly over an open fire. The recipe originated in Alsace long before this region became part of France, and it is still popular in Germany, especially in Berlin.

- Milk 0 fl oz
- Water 0 fl oz
- Sour Cream 5 oz
- Suluguni Cheese 0 oz
- Bacon 0 oz
- Leek 0 oz
Step-by-Step Guide
Step 1
Prepare the dough. Dissolve the yeast in the milk and let it sit in a warm place until a frothy foam forms.
Step 2
Once the yeast is dissolved, place the flour in a bowl, pour in the milk with the yeast, add sugar, vegetable oil, salt, and a little water. Knead the dough.
Step 3
Cover the prepared dough with a damp cloth and let it rest for 1.5 to 2 hours.
Step 4
Prepare the filling. Grate the suluguni cheese using a fine grater and mix it with sour cream.
Step 5
Slice the bacon and leeks into thin strips and add them to the sour cream with cheese.
Step 6
Roll out the prepared dough thinly and place it in an oven preheated to 355°F for 3 minutes.
Step 7
Once the dough has dried slightly, remove it and evenly spread the filling over the surface. Bake for an additional 7 to 8 minutes.
Step 8
Cut the finished flammkuchen into large pieces and serve immediately.
