
Fish Soup with Vodka

Description
Fish soup must be made with several types of fish, but vodka is also very important. The alcohol evaporates, giving a special clarity to the fish broth, and the aroma becomes significantly more refined.
Ingredients
- Fish Oil 5 lbs
- Water 3½ l
- Fish 20 oz
- Potato 4 pieces
- Carrot 1 piece
- Onion 2 heads
- Vodka 5 fl oz
- Green peppercorns 5 pieces
- Bay leaf 2 pieces
- Salt to taste
- Vegetable Oil to taste
Step-by-Step Guide
Step 1
Rinse the bones for the broth, cover them with cold water, bring to a boil, and simmer for 1.5 hours. Strain the broth and return it to the heat, making sure to skim off any foam.
Step 2
Peel the potatoes, cut them into large pieces, and add them to the broth.
Step 3
Dice the onion and carrot into small cubes. Heat a skillet and sauté them over medium heat until golden brown.
Step 4
Taste the potatoes, and if they are halfway cooked, add the sautéed vegetables.
Step 5
Then add the fish, toss in a bay leaf and whole peppercorns. After 5 to 10 minutes, pour in the vodka.
Step 6
Bring to a boil, turn off the heat, and let it steep for 20 minutes to allow the flavors to develop.
Step 7
Chop the parsley, onion, and dill, ladle the fish soup into bowls, and sprinkle with herbs.
