
Fish Soup with Tomatoes and White Wine

Description
This soup is light enough to enjoy in the summer, yet hearty enough due to the fish.
Ingredients
- Scorpion fish fillet 0 oz
- Baking Tomatoes 0 oz
- Fish Oil 5 fl oz
- Basil 1 stalk
- Olive Oil to taste
- Garlic 1 clove
- Salt to taste
- Ground Black Pepper to taste
- Apple Wine 0 fl oz
Step-by-Step Guide
Step 1
Blend the peeled tomatoes in a blender until smooth.
Step 2
Peel the garlic and chop it finely.
Step 3
In a saucepan, heat olive oil, then add garlic, and shortly after, add the finely chopped sea bass fillet.
Step 4
Pour white wine into the saucepan. Without removing from heat, use an immersion blender to puree the fish fillet.
Step 5
Dilute the fish-wine-garlic puree with fish broth and tomato sauce, season with salt and pepper to taste, and bring the soup to a boil. Before serving, garnish with finely chopped basil leaves.
