Fish Rasstegai

Ingredients

  • Mackerel 10 oz
  • Pike Perch Fillet 10 oz
  • Sea Bass 10 oz
  • Unleavened dough 5 lbs
  • Milk 1 tablespoon
  • Chicken Egg 1 piece
  • Butter 5 oz
  • Onion 2 pieces
  • Wheat Flour 5 oz

Step-by-Step Guide

Step 1

Marinate the mackerel in onion. Finely chop the onion and mackerel and mix thoroughly.

Step 2

Cut the sea bass and pike perch into medium pieces. Season with salt and pepper to taste.

Step 3

Divide the dough into thirteen equal pieces and roll them into balls. Leave the balls to rise under a towel for 15 minutes.

Step 4

Sauté the onion in a mixture of butter and vegetable oil until translucent.

Step 5

Add the mackerel to the other fish to share its fat. Then shape the balls into pancakes. Top with fish, onion, and a piece of butter.

Step 6

Seal them in such a way that there is a hole in the middle. Form rasstegai with sea bass and pike perch separately.

Step 7

Brush the rasstegai with a mixture of milk and egg yolk for a golden color.

Step 8

Bake the first batch in the oven for 20-25 minutes at 390°F. Meanwhile, let the second batch rise. Bake the second batch for another 20-25 minutes. After baking, brush the rasstegai with melted butter.
