- Whole egg ½ piece
- Wheat Flour 0 oz

- Roots 0 oz
- Water 15 fl oz
Step-by-Step Guide
Step 1
Finely chop the onion and white roots and sauté with 10 g of butter until cooked; then add the flour, toasted to a light yellow color, dilute with a glass of water, add the fish, and cook for 15–20 minutes.
Step 2
Pass everything through a sieve, pour in the remaining water, mix, and bring to a boil, then season with cream mixed with the egg yolk and butter.
