Fish Pie with Spicy Rice and Salmon
Ingredients
- Butter 0 oz
- Leek 1 piece
- Red Curry Powder 2 teaspoons
- Rice 1 cup
- Puff Pastry 2 pieces
- Smoked haddock fillet 10 oz
- Chives 1 bunch
- Chicken Egg 1 piece
- Dill 1 bunch
- Lemon 1 piece
Step-by-Step Guide
Step 1
Preheat the oven to 210°C or 190°C with fan.
Step 2
Line two baking sheets with parchment paper.
Step 3
Melt the butter in a pan over medium heat and cook the leek, stirring, for 5 minutes or until soft. Add the curry powder and cook for 1 minute or until fragrant. Then transfer to a bowl and mix in the rice.
Step 4
Lay a piece of pastry on the prepared baking sheet and place 1/4 cup of the rice mixture at one end of the pastry, leaving 1 cm from the edge. Top with a piece of salmon and sprinkle with 1/4 of the chives.
Step 5
Fold the second end of the pastry over the salmon and press the edges with a fork or seal the edges with pleats.
Step 6
Repeat the process with the remaining pastry and filling to make 4 pies.
Step 7
Bake for 20 minutes, until the pastry rises and turns golden.
Step 8
Garnish with a sprig of dill and serve with lemon wedges.
