- Fish Trimmings 15 oz
- Parsley 12 pieces
- Meyer Lemon Juice 2 spoons
- Salt ½ spoons
- Dry White Wine 0 fl oz
- Butter to taste
Step-by-Step Guide
Step 1
Chop the fish bones and all trimmings with a sharp knife, place them in a buttered saucepan along with the chopped onion and parsley, add lemon juice and salt, cover with a lid, and simmer over medium heat for five minutes. Then pour in 800 ml of water and wine, bring to a boil, and cook for twenty minutes.
Step 2
Strain the prepared broth.
