Finnish Trout Soup

Ingredients

  • Trout 25 oz
  • Potato 5 pieces
  • Carrot 1 piece
  • Onion 1 head
  • Cream 22% 15 fl oz
  • Salt to taste
  • Bay leaf 2 pieces
  • Green peppercorns 3 pieces
  • Dill 1 tablespoon

Step-by-Step Guide

Step 1

Cover the trout head, belly, and fins with a small amount of water (enough to submerge the fish by 2-3 cm) and simmer over low heat. Shortly before it's done, add salt, bay leaves, and whole peppercorns.

Step 2

Strain the broth.

Step 3

Cut the potatoes into cubes, grate the carrot, and chop the onion. Add all of this to the fish broth and cook over medium heat. Remove the skin from the trout fillet, debone it, and cut it into small pieces.

Step 4

When the potatoes are ready, add the fillet and cream to the soup and cook for a few minutes.

Step 5

Serve with chopped dill.
