Finnish Fish Soup

Ingredients

  • Shallot 0 oz
  • Fish Oil 30 oz
  • 10% cream 5 fl oz
  • Potato 5 oz
  • Carrot 0 oz
  • Lemon ¼ pieces
  • Dill 0 oz
  • Garlic 2 cloves
  • Bay leaf 1 piece
  • Salt to taste
  • Ground Black Pepper to taste
  • Red mullet fillet 5 oz

Step-by-Step Guide

Step 1

Bring the broth to a boil.

Step 2

Dice the onion finely, cut the potatoes into medium cubes, slice the carrot into rounds, cut the fish into 1.5x1.5 cm cubes, and chop the garlic and dill finely.

Step 3

Add the carrots and potatoes to the boiling broth, season with salt and pepper, and simmer gently for 15 minutes until the vegetables are tender.

Step 4

Sauté the onion and half of the garlic with a bay leaf in olive oil over medium heat for 3 minutes until the onion is softened.

Step 5

Add the sautéed onion, garlic, and bay leaf to the broth and cook for another 30 seconds.

Step 6

Add the remaining garlic and fish, cook for another 2 minutes, add the cream, bring to a boil, add the herbs, and remove from heat.

Step 7

Ladle the soup into bowls and serve with a wedge of lemon.
