Ingredients
- Olive Oil 3 spoons
- Leek 1 piece
- Bay leaf 1 piece
- Potato 10 oz
- Smoked haddock fillet 10 oz
- Starch film 1 tablespoon
- Cream ¾ glasses
- Butter 1 tablespoon
- Salt to taste
- Ground Black Pepper a pinch
- Dill to taste
- Lemon to taste
- Water 3 glasses
Step-by-Step Guide
Step 1
In a large pot, heat the olive oil and sauté the onion. Once the onion is soft, add 3 cups of water and toss in the bay leaf. Bring to a boil.
Step 2
Prepare the potatoes. Lower the heat and add the potatoes to the pot. Cover with a lid and cook until the potatoes are tender.
Step 3
Place the salmon in a pot and cook for about 5 minutes. Then, pour in the cream and stir.
Step 4
Prepare a slurry by mixing cornstarch with 1 tablespoon of water, stirring until the cornstarch is completely dissolved. Add this slurry to the soup and cook until the soup thickens (this step is optional; the more cornstarch you use, the thicker the soup will be).
Step 5
Add the butter, stir, and remove from heat.
Step 6
Season with salt and pepper to taste. Sprinkle with a generous amount of chopped parsley or dill. If desired, squeeze some lemon juice before serving.
