Step-by-Step Guide
Step 1
In a bowl, mix the honey, yolks, and salt. Place over a water bath and whisk until smooth, light in color, and slightly thickened, about 3–5 minutes. Let it cool slightly.
Step 2
In a bowl, whip the cream to stiff peaks.
Step 3
Combine both mixtures.
Step 4
Cut the figs into quarters, arrange them on plates, add the raspberries, and serve drizzled with the cream.
