Farro Soup
Ingredients
- Extra virgin olive oil 2 tablespoons
- Onion 1 head
- Celery stalk 2 stalks
- Carrot 2 pieces
- Salt to taste
- Ground Black Pepper to taste
- Garlic 0 oz
- White Beans 1 can
- Tomatoes 2 pieces
- Vegetable Broth 6 cups
- Chopped Parsley 0 oz
- Basil 0 oz
- Grated Parmesan cheese to taste
Step-by-Step Guide
Step 1
Pour the oil into a deep skillet and heat over medium heat. After a minute, add the onion, celery, carrot, a large pinch of salt, and some pepper.
Step 2
Cook for 5-10 minutes until the vegetables are soft, then add the garlic, tomatoes, farro, beans, broth, and stir.
Step 3
Bring to a boil, then reduce the heat so that the mixture simmers steadily. Cook for at least 1 hour until the beans and farro are tender. Add water or broth as needed. Next, add the basil, parsley, and cook for another 5 minutes.
Step 4
Add salt and pepper to taste and serve with grated Parmesan.
