Farmer's Baguettes with Cracklings

Ingredients

  • Wheat Flour 20 oz
  • Salt 0 oz
  • Sugar 0 oz
  • Water 5 fl oz
  • Dry yeast 0 oz
  • Lard 0 oz
  • Milk 10 fl oz
  • Dry yeast 0 oz

Step-by-Step Guide

Step 1

Mix the yeast with a tablespoon (20 g) of flour and 3 g of sugar, then add to warm water (100 ml) at 115°F. Stir and let it rest.

Step 2

Combine half of the flour with all other ingredients except for the salt, and beat at medium speed with a mixer for 3 minutes. Add the remaining flour, warm the lard, and mix in a couple of tablespoons of cracklings (finely chopped pork fat), then pour in the yeast. Knead into a soft dough. Sprinkle with salt and let it rest for 15 minutes.

Step 3

Then knead vigorously. Let it rise for 1 hour to 1 hour and 30 minutes at 85°F.

Step 4

Place the dough on a floured surface, knead it a bit, fold it several times, and let it rise at room temperature for another 40 to 50 minutes.

Step 5

Shape into baguettes and let them rise for another hour. Preheat the oven to 250°F.

Step 6

Spray the dough with water and place it in the oven. Bake covered or with steam. I moistened the oven by spraying it with water three times during the first 15 to 20 minutes.
