  • Milk 1 cup
  • Vegetable Oil 1 tablespoon
  • Meyer Lemon Juice 2 tablespoons
  • Mascarpone Cheese Unagrande 10 oz
  • Powdered Sugar 2 tablespoons
  • Dried Apricots 5 oz
  • Kiwi 1 piece
  • Citrus Zest Mix 1 teaspoon
  • Strawberry 2 pieces
  • Mango 5 oz
  • Sugar 2 tablespoons
  • Cognac 5 fl oz
  • Mint 4 stems
  • Cocoa Powder 0 oz
  • Whipped Cream 1½ tablespoons
  • Wheat Flour 4 tablespoons
  • Vanilla Pod 2 pieces

Step-by-Step Guide

Step 1

To prepare the dough, mix the flour, salt to taste, 2 tablespoons of sugar, egg, vegetable oil, water, and milk until smooth. Make 8 thin pancakes.

Step 2

Cut the vanilla pods lengthwise into 8 strips.

Step 3

For the filling, whisk together mascarpone, lemon juice, powdered sugar, crushed lemon zest, and finely chopped dried apricots. Place the mixture in the center of the pancakes, fold them into bags, and tie with the vanilla strips.

Step 4

Slice the kiwi, strawberries, and mango, lightly sauté them in a pan with 2 tablespoons of sugar, add the cognac, ignite it, and reduce until the sugar thickens.

Step 5

Place 2 pancake bags in the center of a plate and drizzle the prepared caramel with fruit pieces around them.

Step 6

Garnish with whipped cream, mint, and cocoa powder.
