Estonian cinnamon buns

Ingredients

  • Milk 5 fl oz
  • Whole egg 1 piece
  • Salt a pinch
  • Wheat Flour 10 oz
  • Butter 0 oz
  • Dry yeast 0 oz
  • Sugar 4 spoons
  • Ground Cinnamon 1½ spoons

Step-by-Step Guide

Step 1

Dissolve the yeast in warm (but not hot) milk and let it sit until bubbles form on the surface.

Step 2

Melt 30 g of butter and whisk it with the egg yolk. Add flour and salt, then pour in the milk and yeast mixture, and knead the dough by hand. The dough should be firm yet soft.

Step 3

Transfer it to a greased bowl, cover with a towel, and let it rest in a warm place for 1 to 2 hours.

Step 4

Mix 50 grams of butter with 3 to 4 tablespoons of sugar and cinnamon until smooth.

Step 5

After an hour (or two), knead the dough with your hands and roll it out to a thickness of 0.7 cm.

Step 6

Spread the prepared filling on the sheet of dough and roll it up.

Step 7

Cut the rolled-up log in half lengthwise, leaving the tip uncut.

Step 8

Twist the two halves together and join the ends to form a closed circle.

Step 9

Brush with the remaining butter-sugar-cinnamon mixture before placing in the oven (to clarify the technique, we will include an image). Then, arrange on a baking sheet and bake at 390°F for 20-25 minutes. In the last 5 minutes, reduce the temperature to 355°F.

Step 10

Remove from the oven and dust with powdered sugar.
