Description

– You can sprinkle the buns with sesame seeds, poppy seeds, or cinnamon on top as you wish. – Yeast can also be dissolved not only in warm water but also in warm milk. – If you want your baked goods to be sweet, then add a little sugar while whipping the egg whites. Sugar should be added gradually and in small portions during the whipping of the egg whites. I ended up with 14 buns.

Ingredients

  • Wheat Flour 0 lbs
  • Water 10 fl oz
  • Chocolate eggs 2 pieces
  • Dry yeast 1 teaspoon
  • Meyer Lemon Juice 1 teaspoon
  • Sugar 3 tablespoons
  • Salt ½ teaspoon
  • Vegetable Oil 2 teaspoons

Step-by-Step Guide

Step 1

Sift the flour.

Step 2

Separate the egg whites from the yolks. Whip the whites into a stable foam with lemon juice. Add a little water to the yolks, whip, and set aside for greasing the buns.

Step 3

Add the yeast and a little sugar to warm water (100°F), mix, and let sit for 10 minutes.

Step 4

In a bowl, add 500 g of flour, salt, sugar, and pour in the yeast mixture, add oil, egg whites, and gradually add the remaining flour (you may need less or more than 1 kg). Knead the dough.

Step 5

Let the dough rise in a warm place for 1 hour. Then punch it down and let it rise for another 30 minutes.

Step 6

Take the dough out of the bowl and transfer it to a lightly floured countertop. Divide it into 2 parts, roll each into a log, and cut into 7 equal pieces. Shape into buns.

Step 7

Bake on parchment paper greased with oil, brush the buns with egg yolk.

Step 8

Bake in a preheated oven at 430°F. For the first 20 minutes, bake the buns in steam without opening the oven. To do this, place a bowl of water at the bottom of the oven. After this time, using kitchen mitts, remove the bowl of water from the oven and continue baking the buns for another 5–8 minutes until fully cooked, that is, when the buns have a slightly golden crust. Turn off the oven and, using kitchen mitts, take the baking sheet with the finished dish out of the oven.
