Eggplant and Bell Pepper Soup
Ingredients
- Eggplants 4 pieces
- Orange Bell Peppers 2 pieces
- Salad Potatoes 4 pieces
- Tomatoes 3 pieces
- Onion 1 piece
- Parsley to taste
- Cilantro to taste
- Basil to taste
- Paprika to taste
- Ground Black Pepper to taste
- Salt to taste
- Butter 5 oz
Step-by-Step Guide
Step 1
Peel and dice all the vegetables.
Step 2
Chop the herbs.
Step 3
Place the vegetables in a pot. Add enough water to just cover the vegetables.
Step 4
Add the chopped herbs, butter, as well as paprika, ground black pepper, and salt to taste.
Step 5
Cover with a lid, place on the heat, and bring to a boil. After the water boils, reduce the heat and cook for about 45 minutes.
