Eel Soup
Ingredients
- Eel 5 lbs
- Water 5 qt
- Turnips 4 pieces
- Onion 2 heads
- White Part of Leek to taste
- Apple Wine 5 fl oz
- Butter 0 oz
- Salt to taste
- Ground Black Pepper to taste
- Bay leaf to taste
- Dill to taste
Step-by-Step Guide
Step 1
Clean the eel and cut it into pieces of 3–4 cm, place in cold water and bring to a boil. Once the water boils, add salt and remove the foam, cook for 15 minutes. Add black pepper and bay leaf.
Step 2
While the fish is cooking, chop the onion and carrots and sauté them in butter, add white wine and simmer for one minute.
Step 3
Remove the pieces of fish from the pot, clean them from bones and skin.
Step 4
Strain the broth and pour it back into the pot, add the sautéed onion and carrots, bring to a boil and add fresh dill.
Step 5
Remove the pot from the heat. Place the fish back into the pot, add the leek and simmer a little longer.
