Easy Pumpkin Hummus
Ingredients
- Pumpkin 10 oz
- Garlic 6 cloves
- Olive Oil 6 tablespoons
- Dried Rosemary 1 teaspoon
- Chickpeas ⅔ cup
- Cumin 1 teaspoon
- Paprika 1 teaspoon
- Lemon ½ piece
- Sea Salt to taste
Step-by-Step Guide
Step 1
Soak the chickpeas overnight in water. Then rinse, cover with water, bring to a boil, and cook until tender for 20–30 minutes over low heat.
Step 2
Preheat the oven to 355°F. Line a baking sheet with parchment paper. Cut the pumpkin into small cubes and mix in a deep bowl with 2 tablespoons of oil. Spread the pumpkin on the baking sheet, sprinkle with rosemary, place unpeeled garlic cloves nearby, and bake in the oven for 20–30 minutes until the pumpkin is soft.
Step 3
Once the chickpeas are cooked, blend them well in a blender, adding a bit of the cooled cooking liquid. When the chickpeas turn into a puree, add the pumpkin and peeled garlic, as well as the spices, lemon juice, and salt to taste. If necessary, and for a creamier consistency, gradually add olive oil and cooking liquid to the blender.
