Description

You can prepare them in advance and then reheat in the oven. They can be fried in a skillet like regular pancakes. Serve with berry jam.

  • Matzah 3 pieces
  • Raisins 2 tablespoons
  • Ground Almonds 2 tablespoons
  • Dried Apricots 2 pieces
  • Coarse matzo 0 oz
  • Chocolate eggs 3 pieces
  • Sugar 0.3 cups
  • Lemon 1 piece
  • Meyer Lemon Juice 1 tablespoon
  • Vegetable Oil to taste

Step-by-Step Guide

Step 1

Soak the matzah in warm water for 3 minutes, drain the water, and squeeze out excess moisture.

Step 2

In a bowl, mix the matzah, raisins, almonds, finely chopped dried apricots, egg yolks, ground matzah, sugar, grated lemon zest, and lemon juice.

Step 3

In a separate bowl, beat the egg whites until stiff peaks form and gently fold them into the batter.

Step 4

In a deep skillet, heat 5 cm of oil to 375°F. Drop 1 tablespoon of batter into the hot oil and fry for a few minutes until golden brown. Transfer to a paper towel.
