
Easter Kulich

Description
This recipe is lengthy, calorie-dense, but VERY DELICIOUS! The dough rises quite quickly, so good luck and enjoy your meal!
Ingredients
- Wheat Flour 5½ cups
- Milk 1½ cups
- Dry yeast 0 oz
- Sugar 1 cup
- Butter 10 oz
- Light Raisins, Seedless to taste
- Candied fruits 1½ tablespoons
- Cardamom 1 teaspoon
- Citrus Zest Mix 3 teaspoons
- Ground Nutmeg 1 teaspoon
- Vanilla salt 4 teaspoons
- Salt to taste
- Whole egg 10 pieces
- Egg white 3 pieces
Step-by-Step Guide
Step 1
Steep 0.5 cups of flour in 0.5 cups of boiling milk, stirring until an elastic mass is formed.
Step 2
Dissolve the yeast in 0.5 cups of warm milk, leave in a warm place for 10 minutes. Combine the dough with the dissolved yeast in milk, stir, cover with a towel, and place in a warm area to rise.
Step 3
Mash the yolks, sugar, and salt into a uniform mass and whip until pale. Add half of this 'mixture' to the risen dough, add another ¼ cup of flour, knead, and let it rest for another hour.
Step 4
Add the second half of the 'yolk mixture' and 5 cups of flour to the dough, knead until the dough pulls away from your hands.
Step 5
Gradually pour in the melted butter in small portions, add the spices, and let the dough rise again.
Step 6
After the second rise, punch down the dough, add 1/5 cup of raisins and candied fruits, previously dusted in flour, and let the dough rise once more.
Step 7
Pour the finished dough into floured molds until half full, sprinkle with raisins and candied fruits on top, and allow to rise.
Step 8
Brush the kulich with egg yolk and place in the oven for 45 minutes.
Step 9
Make a glaze from the egg whites and sugar and decorate the kulich.
