Ingredients
- Cottage cheese 0 lbs
- Butter 15 oz
- Sugar 1 cup
- Farm fresh eggs 6 pieces
- Dates 5 oz
- Lemon 2 pieces

Step 1
Cut the dates into 4 pieces and drizzle them with the juice of two lemons, let them soak.
Step 2
Puree the cottage cheese (1 kg) in a blender.
Step 3
You can make the cottage cheese yourself: to prepare 1 kg of cottage cheese, you need about 8 liters of sour milk, which should be brought to a boil in a pot and boiled for 5–10 minutes. Then strain through cheesecloth (or a sieve) and squeeze well. Place the prepared cottage cheese in a bowl and let it cool.
Step 4
Add 1 cup of sugar, 400 g of softened butter, 6 egg yolks, and the dates in lemon juice to the cottage cheese. Mix everything together.
Step 5
Take a mold for the Easter cake (if you don't have a special Easter mold, you can use a colander or a flower pot with holes in the bottom), line it with wet cheesecloth in 2 layers, transfer the cottage cheese mixture into it, and cover the top with the edges of the cheesecloth. Place the mold over a pot to catch the liquid, put a weight on top, and refrigerate everything for a day.
