Easter Almond Cookies with Jam
Ingredients
- Sugar 0.6 cups
- Chopped almonds 5 oz
- Salt ¼ teaspoon
- Matzah 0.6 cups
- Butter 5 oz
- Chicken Egg 1 piece
- Vanilla extract ½ teaspoon
- Almond ¼ teaspoon
- Jam 2 tablespoons
Step-by-Step Guide
Step 1
In a food processor, grind the almonds, sugar, matzah, and salt until finely ground, but not to a paste. Transfer to a bowl and add the softened butter, lightly beaten egg, vanilla extract, and almond extract. Mix well, cover with plastic wrap, and chill for 30 minutes.
Step 2
Meanwhile, preheat the oven to 355°F.
Step 3
Roll small balls from the dough, place them on greased baking sheets, and chill for 10 minutes.
Step 4
Make indentations in each ball with your finger or the back of a wooden spoon and fill with jam.
Step 5
Bake one sheet at a time for 10-12 minutes until the cookies are golden brown. Transfer to a plate and cool.
