Duck Soup with Mushrooms

Ingredients

  • Duck Breast 1 piece
  • Chicken bones 0 lbs
  • Onion 1 head
  • Oyster Mushrooms 0 oz
  • Salt to taste
  • Frozen White Mushrooms 0 oz
  • Ground Black Pepper to taste
  • Dried Rosemary a pinch
  • Grated Ginger Root a pinch
  • Olive Oil 1 teaspoon

Step-by-Step Guide

Step 1

In a deep pot, place the duck bones and fillet. Cover with water. Bring to a boil. REMOVE ALL FOAM! You may need to do this several times. Reduce heat, add the whole, previously peeled onion. Simmer for about an hour. Add salt.

Step 2

Thaw the mushrooms, wash, and chop. Sauté in olive oil for about 3-4 minutes. Remove from heat and set aside.

Step 3

After an hour of boiling, remove the onion, duck bones, and fillet from the pot. Discard the onion and bones, and slice the fillet into thin slices or cubes (as desired). Strain the broth through a fine sieve into a clean pot. Return to heat, add ginger, pepper, and sautéed mushrooms. Keep on low heat for 2-3 minutes, remove from heat, cover with a lid, and let steep for a while.
