Dried Green Tomatoes

Description
For this recipe, choose small tomatoes, no larger than a chicken egg.
Ingredients
- Mixed tomatoes of different colors 20 oz
- Salt to taste
- Sugar 5 oz
- Dried Chamomile to taste
- Dried Rosemary to taste
- Olive Oil to taste
Step-by-Step Guide
Step 1
Prepare all the ingredients.
Step 2
Cut the tomatoes in half or quarters depending on their size.
Step 3
Place the tomatoes on a baking sheet cut side down, sprinkle with salt, sugar, thyme, and oregano.
Step 4
Send to the oven or dehydrator. In the oven, set the temperature to 195°F, use convection mode, and leave for at least 5 hours.
Step 5
The finished tomatoes should be dehydrated enough to bend but not break.
Step 6
Transfer the tomatoes to a jar, cover with olive oil, and store in a dark, cool place.
Step 7
Dried green tomatoes can be added to salads, stews, rice, and even chicken noodle soup. Or enjoy them on their own drizzled with good rustic oil.
