
Dietary Cottage Cheese Casserole with Cherries

Description
A great dish to indulge yourself during a diet. The casserole is moderately sweet. If you want to avoid the tartness of cherries, you can use bananas instead, but then omit the raisins.
Ingredients
- Marinated cherries 5 oz
- Egg white 5 pieces
- Raisins 0 oz
- Citrus Zest Mix ½ teaspoon
- Vanillin a pinch
- Honey 1 tablespoon
- Cinnamon to taste
- Low-fat lactose-free milk 20 oz
Step-by-Step Guide
Step 1
First, preheat the oven to 390°F.
Step 2
Pit the cherries, place them in a bowl, add a tablespoon of honey and the raisins, mix, and set aside.
Step 3
Put the cottage cheese in a bowl with high sides (in other words, suitable for whipping), add the lemon zest, vanillin, and cinnamon, and whip with a mixer.
Step 4
Whip the egg whites with a pinch of salt.
Step 5
Layer the cherry and raisin mixture on top of the cottage cheese mixture, squeezing the juice into a bowl, then layer the whipped egg whites on top, gently folding in with a spatula from top to bottom.
Step 6
Line a baking dish with parchment paper, pour the mixture into the dish, and bake in the oven for 20–30 minutes — the finished casserole should be firm in the center.
Step 7
Put the remaining cherry juice with honey in a water bath and reduce until thickened.
Step 8
Let the finished casserole cool in the dish for 10–15 minutes, then plate and drizzle with syrup.
