Diet Turkey and Vegetable Soup
Ingredients
- Olive Oil 0 fl oz
- Onion 2 pieces
- Carrot 2 pieces
- Garlic 2 cloves
- Turkey 30 oz
- Frozen Vegetable Mix 'Lecho' 15 oz
- Salt to taste
Step-by-Step Guide
Step 1
Remove the tendons from the turkey thigh. Prepare the broth: bring the meat to a boil in salted water and simmer for another 35–40 minutes after boiling over medium heat.
Step 2
Sauté the finely chopped onion in olive oil. Once the onion turns golden, add the grated carrot and fry together. After turning off the heat, add the minced garlic to the onion and carrot.
Step 3
Remove the cooked meat from the broth and shred it into pieces. Meanwhile, add the frozen vegetable mix, such as 'Minestrone', to the broth. Bring to a boil and cook for another 5 minutes.
Step 4
Add the sautéed vegetables and meat to the broth. Season with salt to taste.
