Diet Chocolate Cherry Muffins
Ingredients
- Oats 5 oz
- Corn Flour 0 oz
- Rice Flour 0 oz
- Eggs 2 pieces
- Cocoa Powder 2 tablespoons
- Kefir 10 fl oz
- Frozen Cherries 5 oz
- Corn Starch 1 tablespoon
- Water 0 fl oz
- Sugar Substitute to taste
- Vanillin a pinch
- Ground Cardamom ½ teaspoon
- Muesli 3 tablespoons
Step-by-Step Guide
Step 1
Grind the oats into flour.
Step 2
Add the rice flour, corn flour, cocoa powder, vanillin, cardamom, and baking powder, and mix well.
Step 3
Combine the eggs with the kefir and sugar substitute, and whisk until smooth.
Step 4
Add the dry mixture, mix thoroughly; the batter should be similar to medium-thick sour cream. If necessary, add more flour or kefir to achieve the desired consistency.
Step 5
Place the frozen cherries in a saucepan over heat. When they start to melt and release juice, dissolve the starch in water and pour it into the cherries, then simmer while stirring constantly until thickened.
Step 6
In silicone muffin molds, add 1–1.5 tablespoons of chocolate batter, then 1–1.5 teaspoons of cherry filling, and top with more batter to completely cover the cherry layer, filling the molds to ¾ full.
Step 7
Bake in a preheated oven at 180°C (350°F) for 30 minutes.
