Ingredients
- Cream 20 fl oz
- Whole egg 5 pieces
- Vanilla Pod 1 piece
- Sugar 5 oz
Step-by-Step Guide
Step 1
Preheat the oven to 340°F.
Step 2
In a saucepan, heat the cream with the vanilla pod, cut in half. Make sure the cream does not boil. Heat for 5 minutes. Then remove the vanilla and separate the seeds — add them back into the saucepan. Instead of real vanilla, you can use extract.
Step 3
In a bowl, whisk the egg yolks with 60 g of sugar. Then add this mixture to the cream. Mix everything together.
Step 4
Pour the resulting mixture into molds and bake for 40 minutes on a rack, placing a baking tray with water on the lower shelf of the oven. This will create a water bath effect.
Step 5
Let cool and place in the refrigerator until fully set.
Step 6
Then sprinkle with the remaining sugar and caramelize it either by placing it in the oven on the "broil" setting or using a kitchen torch.
Step 7
Serve immediately.
