Ingredients

  • Mascarpone Cheese Unagrande 20 oz
  • 33% Cream 1 cup
  • Egg white 3 pieces
  • Vanilla salt to taste
  • Raspberry leaves 25 oz

Step-by-Step Guide

Step 1

Line 4 small molds with a layer of cheesecloth.

Step 2

In a bowl, mix the cheese and cream until smooth. In another bowl, whip the egg whites until stiff peaks form and gently fold them into the cheese mixture.

Step 3

Transfer the cheese mixture into the molds, cover with plastic wrap, and refrigerate for 8-36 hours.

Step 4

Remove the cheese from the molds and transfer to serving plates, removing the cheesecloth. Garnish with berries and chill until serving. Sprinkle with vanilla sugar. This cheese can also be spread on fresh rolls sliced in half or pancakes.
