Ingredients
- Farm fresh eggs 6 pieces
- Powdered Sugar 15 oz
- Mascarpone Cheese Unagrande 20 oz
- Gelatin 0 oz
- 10% cream 5 fl oz
- Sugar 10 oz
- Meyer Lemon Juice 0 fl oz
- Strawberry 0 oz
- Vanilla Ice Cream 0 oz
- Strawberry to taste
- Fresh basil leaves to taste
Step-by-Step Guide
Step 1
Cream: Using a mixer, combine the yolks of three eggs with 300 grams of powdered sugar. Whip, then add 100 ml of cream and the cheese. Melt the gelatin with 20 ml of cream in a water bath. Whip the egg whites separately. Combine everything and mix with a whisk.
Step 2
Meringue: Whip the egg whites from 3 eggs with sugar, then add the fresh juice. Use a piping bag to shape the mixture into two half-spheres. Bake for 40 minutes at 300°F.
Step 3
Filling: On one half-sphere, place the cream and sliced strawberries (you can substitute strawberries with another berry). On the second half, add diced ice cream and basil. Drizzle both half-spheres with sauce and join them together. Sprinkle the remaining powdered sugar on top.
