Ingredients
- Dates 5 oz
- Water 10 fl oz
- Butter 5 oz
- Activated Baking Soda 1 teaspoon
- Raw cane sugar 5 oz
- Farm fresh eggs 2 pieces
- Vanilla extract 1 teaspoon
- Self-rising flour 5 oz
- Brown Sugar 5 oz
- Cream (40%) 5 fl oz
Step-by-Step Guide
Step 1
Preheat the oven to 355°F. Grease a 20x20 cm square baking dish with butter and line it with parchment paper. In a small saucepan, combine finely chopped dates and water, bring to a boil, and remove from heat. Add baking soda and let it cool to room temperature.
Step 2
Using a mixer, beat 100 grams of softened butter and cane sugar until creamy. Add lightly beaten eggs and mix well again. Add vanilla, mix, and transfer to a large bowl.
Step 3
Using a metal spoon, fold the flour and the date mixture into the butter mixture. Pour the mixture into the prepared dish and bake for 50 minutes. Leave in the dish for 10 minutes, then transfer to a serving plate.
Step 4
For the sauce, combine brown sugar, cream, and 100 grams of butter in a saucepan, heat until the butter melts and the sugar dissolves. Bring to a boil, reduce the heat, and simmer for 2 minutes. Drizzle the hot sauce over the pudding and serve immediately, garnished with cream and raspberries.
