Ingredients

  • Coarsely Ground Rye Flour 15 oz
  • Wheat Flour 5 oz
  • Salt to taste
  • Water 15 fl oz
  • Dry yeast 0 oz

Step-by-Step Guide

Step 1

Prepare the starter: dissolve 6 g of yeast in 275 ml of warm water until fully dissolved, add 250 g of rye flour, and mix thoroughly. Cover with a towel and let it sit for 3 to 5 hours.

Step 2

Add 200 g of rye flour, 210 g of wheat flour, 115 ml of water, and salt to the starter. Knead the dough, form it into a ball, cover it, and let it rest for 45 minutes.

Step 3

Preheat the oven to 480°F.

Step 4

Place the dough on a surface, knead it, form it into a ball, and cover it. Let it rest for another 45 minutes.

Step 5

Place the dough on a floured surface, divide it into 2 parts, form 2 balls, and cover them. Let them rest for another 5 minutes.

Step 6

On a floured surface, shape the dough into 2 tight balls. Place the balls in round molds lined with a towel and dusted with flour, cover with a towel, and let them rise for 1 hour.

Step 7

Transfer the bread to a baking sheet, making square cuts on each.

Step 8

Spray the oven walls with water from a spray bottle, place the molds with bread in the oven, and bake for 5 minutes.

Step 9

Reduce the temperature to 390°F and bake for another 40 to 45 minutes.
