
Cupcakes with Berry Cream

Description
My cream also includes banana. We make it the same way as with the berries. Because the cream turns out very runny and doesn't want to set, I added cornstarch.
Ingredients
- Wheat Flour 5 oz
- Sugar 5 oz
- Margarine 5 oz
- Farm fresh eggs 2 pieces
- Butter 5 oz
- Bananas 2 pieces
- Fresh Berries 5 tablespoons
Step-by-Step Guide
Step 1
For the batter, beat the softened margarine with sugar until light and fluffy.
Step 2
Add the eggs one at a time, beating well after each addition.
Step 3
Sift the flour with the baking powder and mix the batter with a mixer on high speed.
Step 4
Fill the cupcake liners with the batter.
Step 5
Bake in a preheated oven at 355°F for about half an hour (check for doneness with a toothpick).
Step 6
Let the cupcakes cool.
Step 7
For the cream, beat the softened butter at maximum power. Then add the berries one tablespoon at a time, mixing each time.
Step 8
Transfer the cream to a pastry bag and decorate the cooled cupcakes. Store in the refrigerator.
