Cucumber Puree Soup
Ingredients
- Olive Oil 0 fl oz
- Garlic 2 cloves
- Onion 1 piece
- Meyer Lemon Juice 0 fl oz
- Cucumbers 30 oz
- Chicken Broth 15 fl oz
- Avocado 1 piece
- Parsley 0 oz
- Natural Yogurt 5 oz
Step-by-Step Guide
Step 1
Heat the oil in a large saucepan over medium heat.
Step 2
Add finely chopped garlic and onion. Cook, stirring occasionally, for 4 minutes.
Step 3
Add lemon juice and cook for another minute.
Step 4
Peel the cucumbers and remove the seeds, then slice them thinly. Add them to the pan along with the broth. Season with salt and pepper, bring to a boil, then reduce the heat. Cook for 6-8 minutes until the cucumbers are soft.
Step 5
Place the soup in a blender, add the avocado and parsley. Blend on low speed until smooth.
Step 6
Serve in bowls with a spoonful of yogurt. This soup can be enjoyed hot or cold.
