Step-by-Step Guide
Step 1
To make the jam, use large overripe cucumbers. Peel them, trimming off the ends. Use a small spoon to remove the seeds from the cucumbers.
Step 2
Then cut into cubes about 0.5–1 cm and place them in a cooking pot. Pour honey over them (500 g of honey for 1 kg of cucumbers).
Step 3
Mix thoroughly and place in a cool area (for 2 to 8 hours) to allow juices to develop.
Step 4
Place on the heat, bring to a boil, then reduce the heat to the lowest setting.
Step 5
Cook uncovered for several hours, stirring occasionally, until the liquid evaporates and the cucumbers become translucent.
Step 6
Transfer the hot jam into jars and seal them tightly.
Step 7
After cooling, store the jam.
