Cucumber Gazpacho
Ingredients
- Cucumbers 20 oz
- Natural Yogurt 10 fl oz
- White bread 5 oz
- Garlic 2 cloves
- Green onions ½ bunch
- Mint 4 sprigs
- Dill ½ bunch
- Olive Oil 2 tablespoons
- Lemon Juice 2 tablespoons
- Salt to taste
- Ground Black Pepper to taste
Step-by-Step Guide
Step 1
Dice the cucumbers, peel and grate the garlic, and tear the herbs.
Step 2
Place the cucumbers, bread, onions, mint, dill, and garlic into a blender. Add the yogurt and blend until smooth.
Step 3
Season with salt and pepper. Pour in the lemon juice and olive oil, and mix.
