Crumble Nut Cake with Kumquat
Ingredients
- Kumquat 3 pieces
- Sugar 15 oz
- Orange juice concentrate 5 fl oz
- Butter 10 oz
- Egg white 4 pieces
- Wheat Flour 10 oz
- Baking Powder 0 oz
- Hazelnut 5 oz
- Egg white 1 piece
- Chocolate 5 oz
- Powdered Sugar 0 oz
Step-by-Step Guide
Step 1
Preheat the oven to 375°F.
Step 2
Wash the kumquats, dry them, and slice them into thin rounds.
Step 3
Mix 4 tablespoons of sugar with orange juice, pour into a pan, and heat until the sugar dissolves. Dip the kumquat slices into the caramelized sugar and place them on a plate. Set aside 10 slices for decorating the cake.
Step 4
Thoroughly cream the butter with 250 grams of sugar. Gradually add the eggs one at a time to the mixture. Add the flour, baking powder, and knead the dough.
Step 5
Whip the egg white to a stiff foam with 2 tablespoons of sugar, gently fold in the chopped hazelnuts and kumquat slices.
Step 6
Grease the cake pan with fat and dust the bottom and sides with flour.
Step 7
Preheat the oven to 345°F. Pour the dough into the pan and smooth it out. Place the egg white and nut mixture down the center of the dough along its length. Bake the cake for 70 minutes.
Step 8
Melt the chocolate in a water bath and drizzle over the finished cake. Decorate with kumquat.
