Crispy French pastries with red fish
Ingredients
- Onion 2 heads
- Puff Pastry 20 oz
- Canned Saira 10 oz
- Dry White Wine ⅓ cup
- Bay leaf to taste
- Green peppercorns 3 pieces
- Parsley 1½ bunches
- Rice 5 oz
- Sugar 2 tablespoons
- Ground Cinnamon 2 teaspoons
Step-by-Step Guide
Step 1
Boil the rice with the addition of wine, bay leaf, pepper, 0.5 bunch of parsley, and salt.
Step 2
Finely chop the onion and sauté in vegetable oil until golden brown.
Step 3
Wash the remaining bunch of parsley, remove excess moisture, and chop finely.
Step 4
Line a baking sheet with parchment paper.
Step 5
Cut each sheet of pastry diagonally into 5 pieces. Brush the top of 1 strip with melted butter, cover the others with a damp cloth and set aside. Mix sugar with cinnamon and sprinkle over the buttered strip. Place another strip on top and brush with butter.
Step 6
Thoroughly mix the rice, onion, parsley, fish, and add a couple of drops of broth.
Step 7
Wrap the filling in the pastry to form a small pastry. Brush both sides with egg yolk slightly diluted with water.
Step 8
Bake for 30 minutes at 390°F until the pastries are golden brown.
