Crispy caramel sticks with pumpkin seeds
Ingredients
- Sugar 1 cup
- Water ½ cup
- Ocean salt a pinch
- Shelled pumpkin seeds 5 oz
Step-by-Step Guide
Step 1
Grease 2 sheets of parchment paper with oil.
Step 2
In a saucepan, combine water, sugar, and salt and bring to a boil over medium heat, stirring until the sugar dissolves. Cook without stirring and brush the sides with a wet brush for about 10-12 minutes until caramel color is achieved.
Step 3
Remove from heat and add the seeds. Stir for about 3-4 minutes until the caramel begins to crystallize.
Step 4
Return the saucepan to the heat and cook for about 4-5 minutes until the caramel melts and darkens slightly, and the seeds turn golden.
Step 5
Carefully spread the caramel onto one sheet of parchment and cover with the second sheet. Quickly roll out the caramel between the sheets of parchment with a rolling pin as thin as possible. Remove the top sheet, and using a pizza cutter, cut the caramel into small strips. Allow to cool and then remove the bottom paper.
