Step 1

Preheat the oven to 355°F.

Step 2

Peel the beets and slice them very thinly, about 1.5 mm. It is easiest to slice them using a mandoline. Toss with olive oil.

Step 3

Spread the beets on 2 baking sheets in a single layer, cover with foil, and place in the oven for about 20 minutes, until the edges of the slices start to dry. Remove the foil and bake for another 10–20 minutes until the chips are golden.

Step 4

Transfer to a wire rack and let cool — the chips will become crispy.
