Crispy Banana Muffins
Ingredients
- Butter 5 oz
- Wheat Flour 1½ cups
- Baking Powder 2 teaspoons
- Salt ½ teaspoon
- Bananas 3 pieces
- Sugar ¾ cup
- Egg white 1 piece
- Ground Cinnamon ½ teaspoon
- Activated Baking Soda 1 teaspoon
- Brown Sugar 0.3 cups
Step-by-Step Guide
Step 1
Preheat the oven to 375°F (175 degrees for electric ovens).
Step 2
In a large bowl, mix together the flour, baking powder, baking soda, and salt.
Step 3
Mash the bananas into a puree.
Step 4
Melt the butter.
Step 5
Combine the banana puree with the sugar (¾ cup), egg, and melted butter. Add to the flour mixture and mix well.
Step 6
Place paper liners in the muffin baking tray.
Step 7
Distribute the batter into the liners so that they are filled a little over halfway.
Step 8
In a small bowl, mix the brown sugar, 2 tablespoons of flour, and cinnamon. Add a tablespoon of butter and mix until it resembles coarse crumbs.
Step 9
Sprinkle the crumb mixture over the muffins.
Step 10
Bake in the oven for about 20 minutes until done.
