  • Pizza Flour 10 oz
  • Sugar 1 tablespoon

  • Fresh basil leaves 2 bunches
  • Activated Baking Soda a pinch
  • Vegetable Oil 2 tablespoons
  • Parsley 1 bunch
  • Scallions 1 bunch
  • Butter 10 oz
  • Ground Black Pepper to taste
  • Fresh basil leaves 10 oz
  • Onion 1 head
  • Leek 1 stalk
  • Horseradish Leaves 0 oz
  • Clarified Butter 5 oz
  • Cottage cheese 10 oz

Step-by-Step Guide

Step 1

Chop the greens. Mix half of the basil with parsley, green onion, and butter. Season with salt and pepper.

Step 2

Chop the spinach and onion, slice the leek into long strips. Blanch and rinse with cold water.

Step 3

Prepare the crepes: lightly beat the eggs. Pour in 240-360 ml of milk, add 120 g of flour. Mix well. Add the remaining milk and flour, and mix thoroughly. Add sugar, salt, baking soda, and vegetable oil. Let the batter rest for 30 minutes, stirring occasionally. Cook the crepes in clarified butter.

Step 4

Mix basil, spinach, onion, egg, cottage cheese, and horseradish, and season with spices.

Step 5

Place the mixture on the crepes, roll them up, and tie with strips of leek to form pouches.

Step 6

Bake on foil, placing flakes of butter with greens on top.
