Ingredients

  • Frozen White Mushrooms 0 oz
  • Pickled Chanterelles 5 oz
  • Butter 0 oz
  • Dried Chamomile ½ teaspoon
  • Milk 10 fl oz
  • Garlic 1 clove
  • Chopped Sage Leaves 1 tablespoon
  • Thin Crepes 12 pieces
  • Sour Cream 5 oz
  • Cream 22% 5 fl oz
  • Cauliflower 5 oz
  • Onion 1 head
  • Broccoli 5 oz
  • Turnips 3 pieces
  • Blue Cheese 5 oz
  • Cheshire Cheese 2 tablespoons
  • Salt to taste

Step-by-Step Guide

Step 1

Thaw the porcini mushrooms and finely chop them along with the champignon mushrooms.

Step 2

Melt the butter in a skillet, add all the mushrooms and the crushed garlic clove. Season with salt, add dried thyme, and cook for about 5 minutes.

Step 3

Peel and finely chop the onion, add it to the mushrooms, and cook for another 5 minutes. Add 2/3 of the sour cream and chopped parsley, mix, and cook for another 2 minutes, then remove from heat.

Step 4

Peel the carrots, pour hot milk over them, season with salt, and boil for 5–6 minutes.

Step 5

Drain the milk, place the carrots in a blender, and puree until smooth.

Step 6

Blanch the broccoli florets in boiling water for 3 minutes, then pour in the cream and bring to a boil. Transfer the broccoli along with the cream to a blender and puree until smooth.

Step 7

Blanch the cauliflower florets for 3 minutes, then add the cheese and blend.

Step 8

Place 2 crepes (one on top of the other) on a greased baking sheet, spread the broccoli puree on top, and cover with another 2 crepes.

Step 9

Then, layering each filling with 2 crepes, alternately add: half of the mushroom mixture, carrot puree, cauliflower puree, and the remaining mushroom mixture.

Step 10

Cover with the remaining crepes, spread with sour cream, and bake in the oven at 160°C for 10 minutes.

Step 11

Sprinkle with cheese and bake for another 2 minutes.

Step 12

Remove from the oven, let cool slightly, cut into portions, and serve.
