
Crème Brûlée with Fresh Berries

Description
The berries in this recipe can be any variety, and you can also use finely chopped pieces of fruit instead of berries. This recipe comes from a restaurant called 'The Maple Table' in a small town. The recipe was shared with us by Sarah Johnson, the author of the book 'Flavors of the World with Sarah Johnson.'
Ingredients
- 3.2% Milk 5 fl oz
- Sugar 0 oz
- Whole egg 6 pieces
- 33% Cream 10 fl oz
- Vanilla Pod ⅓ pieces
- Raw cane sugar 0 oz
- Fresh Berries 5 oz
Step-by-Step Guide
Step 1
Heat the milk to a temperature of 160°F.
Step 2
Whisk the sugar with the egg yolks and combine with room temperature cream.
Step 3
Add hot milk and vanilla to the mixture.
Step 4
Strain the finished mixture through a fine sieve.
Step 5
Pour into four ceramic dishes and place in a preheated oven at 210°F for 1 hour. Remove from the oven and allow to cool.
Step 6
Sprinkle with brown sugar and brûlée with a torch.
Step 7
Garnish with berries before serving.
