Crème brûlée with caramel and lemon zest
Ingredients
- Milk 30 fl oz
- Cinnamon 1 piece
- Vanilla extract 1 tablespoon
- Citrus Zest Mix 2 pieces
- Wheat Flour 2 spoons
- Chicken Egg 6 pieces
- Sugar 10 oz
Step-by-Step Guide
Step 1
Bring 700 ml of milk to a boil, then add a cinnamon stick, lemon zest, and vanilla. Reduce the heat and let it simmer for another 5 minutes.
Step 2
Meanwhile, whisk half of the remaining milk with the egg yolks, and mix the other half of the milk with the flour.
Step 3
Pour the boiled milk into a clean pot and, while stirring quickly, add the milk with the eggs and the milk with the flour, then sprinkle in 100 grams of sugar. Return to the heat and cook, stirring constantly, until the cream thickens (about 10 minutes).
Step 4
Pour the crème brûlée into 6 small bowls and let it cool (for about 1 hour).
Step 5
Prepare the caramel. Place the remaining sugar in a saucepan and, stirring continuously, keep it over low heat until it completely melts and turns a golden color (about 5 minutes). Carefully pour the caramel into the molds (over the cream) and let it sit for 5 minutes to harden.
