Ingredients
- Whole egg 4 pieces
- 10% cream 15 fl oz
- Vanilla Pod 1 piece
- Sugar 0 oz
- Raspberry leaves to taste
Step-by-Step Guide
Step 1
Mix the vanilla, cream, and 30 grams of sugar. Then place on the heat and bring to a boil.
Step 2
In a bowl, mix 4 egg yolks and 30 grams of sugar.
Step 3
Gradually pour in the hot cream (remove the vanilla pod beforehand).
Step 4
Pour the cream into ramekins, then pour 1/4 boiling water into the baking dish. Line the bottom of the dish with parchment paper to prevent water droplets from getting into the cream. If a drop of boiling water gets in, the yolks will curdle.
Step 5
After 15 minutes, remove the ramekins and let them cool. Place the cream in the refrigerator for a few hours to stabilize.
Step 6
After stabilization, sprinkle sugar on top, then caramelize the top with a torch.
Step 7
Garnish the cream with berries, raspberries, and you can also use blueberries or strawberries.
