Ingredients

  • Wild Garlic Greens 1 bunch
  • Onion 1 head
  • Butter 0 oz
  • Wheat Flour 0 oz
  • Chicken Broth 25 fl oz
  • Cream 10 fl oz
  • Salt to taste
  • White Pepper (whole) to taste

Step-by-Step Guide

Step 1

Finely chop the wild garlic to get about 5 tablespoons of greens.

Step 2

In a saucepan, melt the butter and add the finely chopped onion. Sauté over low heat until golden brown. Then add the flour and sauté for another minute, stirring well.

Step 3

Gradually pour in the broth, stirring constantly and breaking up any lumps.

Step 4

Then add half of the cream and the chopped wild garlic. Bring to a boil, reduce the heat, and simmer for about 10 minutes.

Step 5

Blend everything with an immersion blender, but do not make it completely smooth. Season with salt and pepper.

Step 6

Lightly whip the remaining cream and add it to the soup.
